CREATIVE PROJECT:
Apple Disk Bird Feeder

1Materials:

5 large red apples
Sharp knife
String
Scissors
Peanut butter
Plastic or wooden spoons
Birdseed

What to do:
1. Talk about birds, what they like to eat. Explain that they are going to make bird feeders.
2. Slice the apples horizontally into 1"-thick round disks (adult only). Do not peel the apples because the red peeling will attract birds. Then use the knife to poke a hole into each disk (adult only).
3. Give each child an apple disk. Help them thread a 12" piece of string through the hole and tie the two ends together in a knot.
4. Encourage the kids to spread peanut butter on one side of the disk using spoons.
5. Next, the children can sprinkle birdseed on the peanut butter.
6. Help the kids hang the apple disks from a tree or a shrub near a window if possible so they can watch the birds enjoy their treat.

Connie's extra learning tip: Have a notepad or spiral notebook handy for older kids to keep a bird watching journal of their feathered friends that come to visit and encourage the younger kids to draw pictures of the birds. You can also snap pictures and include in the journal.

MOM'S TECHNO APPLE STRUDEL RECIPE

From The Backstage Gourmet Cookbook: Favorite Vegetarian Recipes From the World of Music by PJ Grimes and Steve Hoffman

Filling

  • 1½ lbs apples (any kind)
  • Zest of ½ lemon
  • Juice of ½ lemon
  • 5 T finely-chopped walnuts or almonds
  • 5 T raisins
  • 4 T brown sugar
  • Cinnamon (to taste)
  • Powdered sugar (garnish)
  • 4 T butter

Dough

  • 1 C pastry flour
  • ½ tsp salt
  • 1 medium egg
  • 2 tsp oil
  • 7 tsp warm water
  • Butter (to coat)

Start with the dough by sifting flour and salt together into a large bowl, and create a well in the center. In a separate bowl, mix egg, oil, and water. Add this slowly to the flour to obtain a smooth and light dough. Allow to sit in a warm spot for 20 minutes. Preheat oven to 400 degrees. Peel, core, then grate the apples. Add other ingredients, melting butter before adding, and mix. Roll out dough into a thin rectangular sheet, trimming off the sides. Spread a light coat of butter on the dough, then spread filling along one of the long edges of the dough. Roll tightly, coat with butter, and cook for 30-40 minutes, until golden brown, adding a light coat of butter while cooking and when done. Remove from oven and dust with a light coating of powdered sugar.

MOLLIE'S APPLE-YOGURT SALAD
2 cups yogurt
1/4 cup real maple syrup
1 lemon, cut in half
5 medium sized apples
(your favorite kind) 
Extras (you choose)
2 stalks celery, cut in small pieces
1/2 cup raisins
1/2 cup dried cranberries
1/2 cup chopped toasted walnuts

Ask an adult to help with toasting the walnuts and cutting up the apples.

1. Put the yogurt in a medium sized bow
2. Add the maple syrup to the yogurt and stir until it's mixed in
3. Squeeze a lemon and pour the juice into a large bowl
4. Cut the apples into quarters and then into little chunks (the size of dice) and add them to the lemon juice, and stir to get the apples all wet
5. Pour the yogurt mixture into the apples and mix gently
6. Put the celery, raisins, dried cranberries, and walnuts into small bowls and put them on the table

Time to Eat!

7. Serve the apple yogurt salad in bowls
8. Pass the toppings around so each person can make his or hers special

"A" IS FOR APPLESAUCE

Ingredients:

Apples
Knife (adults only)
Plastic knives (for kids)
Paper plates
Microwave-safe bowl
Mixing Spoon
Cinnamon
Honey
Measuring spoons
Potato mashers


The fun begins:
 

1. Ask the kids to wash the apples.
2. Peel, core and slice the apples (adults only).
3. Place the apple slices on plates and ask the kids to cut them into small pieces using the plastic knives (make sure the kids have washed their hands well through all stages of the activity).
4. Put the small pieces into the bowl and place in the microwave. Remove the bowl from the microwave every two minutes to stir.
6. The second time, after stirring, ask the kids to pour some honey and cinnamon into the bowl, start with a teaspoon of cinnamon and a tablespoon of honey, then add as needed during the stirring process.  The amount you add will depend on the amount of apples you use and your taste.
7. Once the apples are mushy, show the kids how to use potato mashers to mush it up more
8. Serve the applesauce on top of favorite foods, such as pancakes, waffles, yogurt, ice cream
