BERRY RECIPES

Connie's Cranberry Salad Supreme
 
1 - 16 oz. Can Jellied Cranberry Sauce
1 - 16 oz. Can Whole Berry Cranberry Sauce
1 - 15 oz. Can Mandarin Oranges (cut in pieces)
1/2 Cup Crushed Pineapple
1 Cup Raisins
1 Tsp. Vanilla Extract
1 Tsp. Living Foods 100% Organic Hawaiian Lehua Honey (regular honey can be substituted but you just don't get the same zip this salad is known for)
 
Mix all the ingredients together and refrigerate.  This cranberry salad has been a treat in my home for years and it's my most requested holiday dish. It takes less than 5 minutes to throw together and is the perfect side dish for your own holiday dinners or to take to the office or church dinners.

Mix up some fun In the kitchen with your kids:

When you whip up this beautiful drink and take a few sips, you'll feel like you're bursting with energy?  This is so good for you, your parents might even let you drink it for breakfast. 

1/3 cup vanilla yogurt
1/3 cup blackberries or blueberries, fresh or frozen (optional)
1/2 ripe banana (optional)
1 tbs freshly squeezed lemon juice
1 cup unsweetened purple grape juice
1 tbs vanilla flavored protein power (can be found at health food stores)
2 ice cubes

1.  Spoon the yogurt into the measuring cup until it reaches the line for 1/3 cup. Pour this into the blender.
2.  If you like, you can add (either or both):
  • 1/4 cup blackberries or blueberrie
  • 1/2 banana
3.  Squeeze a lemon.  Measure 1 tbs lemon juice and pour this in
4.  Measure 1 cup grape juice and pour it in.
5.  1 tbs. protein powder
2 ice cubes
6.  Blend until smooth and pour into 1 or 2 glasses.

Connie's Berry Funny Face Sandwiches

From Connie's Kitchen:  These sandwiches are so much fun to make with your kids. Just have the ingredients available and be there to help. Let them be creative and come up with their very own funny faces.  For added fun, make a learning game out of it with measuring and counting, geometric shapes and don't forget to snap pictures before the funny faces are gobbled up!

For face, use either whole wheat english muffins or whole grain sliced bread, may be lightly toasted if you prefer.

For spread, use either honey and peanut butter mixed, or maple syrup and almond butter mixed together for a more nutritious combination. You can also use cream cheese mixed with mashed banana and a little honey and cinnamon. Any of the above can be combined. Mix it up and have fun!

Cover face bread with spread and then use the following for eyes, nose, mouth, whiskers, ears, eyebrows, eyelashes, etc.

Kiwi, Sliced bananas, strawberries, blueberries, raspberries, goji berries, apples sliced thin, raisins, pecans, walnuts, pretzel sticks...use your imagination and let the kids design their own funny face sandwiches using healthy, wholesome ingredients.
